This culinary medicine workshop will focus on home cooking and trends in and out of the kitchen using whole food plant-based recipes focusing on topics such as local, fresh, organic, seasonal produce, and techniques of plant-based cooking and how this can enhance one’s health. About 80% of the chronic disease burden can be prevented and in some cases living a plant-based lifestyle can even reverse most of our top killers. We will look at trends of home-cooking and how it correlates to obesity and other factors of health. We will also review current trends in current nutritional education for medical professionals.


Learning Objectives

  1. Explore the research regarding cooking trends and weight loss, obesity, and mortality.
  2. Explore medical education research regarding nutritional counseling and explore patients’ views on dietary counseling.
  3. Review current trends in hospital, state, and federal levels with nutrition in medical education.
  4. Learn how to cook simple recipes and learn techniques of meal preparation and repurpose leftovers and the concept of batch cooking.
